In 2007, restaurateur Sean Quinn opened Flat Iron Grill with a vision to bring together his love of bold flavors, warm hospitality, and a sense of community. After a culinary adventure through Argentina, Sean returned inspired to reimagine the traditional steakhouse. The result? A unique fusion of Pacific Northwest comfort and South American flair.

With over 37 years in the restaurant industry, Sean Quinn’s passion for culinary creativity and guest experience knows no bounds. His career took a transformative turn during a culinary pilgrimage to Argentina, where he fell in love with the rich, smoky flavors of Asado-style grilling. Inspired, Sean co-founded Asado, the renowned Argentine steakhouse that introduced the flat iron steak to the Seattle dining scene.
Seeking to bring his love for bold flavors closer to home, Sean opened Flat Iron Grill in Issaquah, where he’s been delighting locals ever since. His passion for high-quality food and memorable dining experiences extends beyond one restaurant — he’s also the creative force behind The Black Duck Cask and Bottle House and The Iron Duck Public House in North Bend. Whether it’s a perfectly seared steak, a curated whiskey flight, or a welcoming ambiance, Sean’s mission remains the same: to create an experience that keeps guests coming back for more.
